Yummy Carrot Halwa !

Am lovin it!!! This is my all time fav dessert and can have it anytime anywhere. Considering i have sweet tooth and also considering that am such a sweetypie :P.. i am wondering why my blog till date has no desserts. Tej pointed this out to me one day and here you go Tej...

Last weekend was Women's Day and also my good friend Naga's Bday. And to celebrate the occasion I prepared carrot halwa and see how yummy it looks.

And know what?? we had these mails doing the rounds in office where any lady gets to quote what being a women means to her ok? I sent out my pic n quote and they published it (see below) !!!! But sadly it was sent only to all the ladies :(((((((((( Neways..thanks Kavi for helping me draft it.




Ingrediants: (Serves 3)
3 cups Grated Carrot ofcourse..how can u make carrot halwa without right?? :P
2 cups Milk (boiled with powder of almonds and cashews until thick)
1 cup Sugar 2-3 tsp GheeKesar (2-3 strands)
1 tsp powdered Elakki/Elachi/Cardamom
2 tsp Dry Raisins
2 tsp Semi dry dates (cut to small pieces)
2 tsp Cashewnuts
Any other dry fruit will also do like pistas, walnuts, almonds etc.

Method:
1. Fry raisins, dates and cashewnuts in a 1 tsp of ghee and keep aside.
2. Srinkle water on the grated carrot and cook it for a few mins in the pan. Dont cook so much that all the juicy-ness goes out of it ok?
3. Add the boiled milk and kesar and cook until all of it disappears into the carrot. Magic !!! :)))



4. Add Sugar and again let is all disappear.
5. When the halwa begins to leave the sides of the pan, throw in all the dry fruits, elachi pwdr and a spoon of ghee and mix well.



Serve hot with vanilla icecream. Hot n Cold gives max effect ....!!!
